Spinach and Artichoke on Focaccia!

These are one of my favorite sandwiches to make because they are fancy enough to serve for dinner!

What you’ll need…

– 2 cans of your choice of quartered artichokes

– 2 organic tomatoes (sliced)

– 1-2 tbsp of fresh basil

– 1 garlic clove

– 1/2 jar of red sauce of choice

– 1 small yellow onion (diced)

– 1 cup of organic spinach

1. Saute onion and garlic in a pan until translucent then add herbs and give a good stir or two

2. On a baking sheet/roasting pan, place sliced tomatoes

3. When onions, garlic, and herbs are done, place on top of tomatoes on the baking sheet

4. Place in a 450° oven for about 20 min give or take until roasted

5. In the same stove top pan used earlier to saute onions and garlic, cook the spinach

6. When veggies in oven are done, place all in the same pan with the spinach and red sauce, simmer until sauce is warmed to your liking

6. Toast slices of focaccia in oven then serve!
