Vegan Creamy Dill Potato Soup!

Miss that creamy potato soup because you’re trying to avoid dairy?? Well here’s your craving solution…

What you’ll need…

– 1 cup of almond milk

– 1 1/4 cup of water (add a little at a time to get the consistency you want)

– pinch of cayenne pepper

– 1/2 package of organic dill

– 4 large roasted red potatoes (pre-roasted in oven)

– tsp of salt

– tsp of pepper

– 1/2 onion (sauteed)

– tbsp vegan butter (I use Earth Balance soy free)

– 2 ears of corn

Blend ingredients together in a blender. Once pureed, put all contents in a pot and add freshly shucked corn (I shaved it off of cob). Simmer until corn is cooked and at a temp you prefer.
