Vegan Taco Soup!

Feel like you’re missing out on that great taco soup by trying to avoid animal products??

Worry no longer! Try this great recipe to satisfy your mexican craving!…..and it’s so easy!!!

What you’ll need…

-1 can of organic pinto beans

-1can of organic garbanzo beans

-1 can of organic lentils

-1 can of organic diced tomatoes

-1/2 jar of small jar of salsa of choice

-organic corn (I used 1/2 bag of frozen corn)

-2 zucchini

-4 tall stalks of broccoli

(both green veggies are optional)

-1 empty can full of water

-salt to taste

-1/2 tsp pepper

-1 1/2 tbsp of cumin (taste test to see if you need more)

-2 tsp of chili powder

-3/4 tsp of garlic powder

After dicing the green veggies, add all ingredients to a pot and bring to a boil. Gently stir, cover, then place on simmer for about 1 1/2 hours. (You can get away with shorter cooking time, but I prefer cooking on low for longer to absorb all the tastes you need.)

Add some tortilla chips to each bowl, then serve!
