Roasted Veggie Pasta

Okay, so my good friend gave me this recipe to try and I absolutely love it! Another win for getting the kiddos to consume their veggies!

What you need…

2-3 organic zucchinis

2 organic yellow squash

About 2 cups of organic cherry tomatoes

2 cups of organic cauliflower

1 box of organic Fusilli pasta

Salt, pepper and garlic powder to taste

Olive oil

Directions

Preheat oven to 400°. Chop all veggies and lay out on roasting pans. Douse in olive oil, salt, pepper, and garlic powder to taste and spread out.

Roast in oven for about 30 min.

Cook pasta and add about a tsp of olive oil and salt to boil.

Once veggies and pasta are done, mix all together and add additional salt and pepper to taste.

Viola!! Yummo!!

So easy!

      Hey! Yes you can also put in some Parmesan! I try to stay away from dairy, but that sounds good!
