I’m always trying to invent new and easy recipes to just throw into a Crockpot. Here’s one that is easy to create on your “busy mom” days…
What you’ll need…
1 can of organic pinto beans
1 can of organic garbanzo beans
1 can of organic diced tomatoes
1 can of organic kidney beans
bag of organic frozen corn
1/4 cup of salsa
1 tsp of salt
1 tsp of pepper
1 tbsp of garlic powder
1 tbsp of chili powder
(things I didn’t have, but you can add: cumin, green peppers, onions…)
Directions
Place Crockpot on low and add all ingredients.
Cook on low for 4 hours…
Once done, place all ingredients in blender and mix until pureed.
Once all pureed, place on warmed tortillas and serve with toppings of your choice! I didn’t have much to choose from other than my vegan cheese lol, but you can top with avocado, lettuce, tomatoes, etc….

Like I said, super easy!!
(This made a TON so you can serve plenty –over 4–, freeze for later, or just use 1/2 of the portions for smaller company/family.)
