What you’ll need…
7 tbsp of vegan butter (Earth’s Balance soy free) + 1 tbsp of EVOO
1/2 cup of brown sugar
1/4 cup of organic cane sugar
1 tbsp (or egg size amt) of organic agave nectar
1 tsp of vanilla extract
1/2 tsp of baking soda
1/2 tsp of salt
1 1/2 cups of gluten free all purpose flour (I used Red Mill)
1/4 tsp of cinnamon
1/2 -3/4 of a bag of Enjoy Life Chocolate Chunks
Directions
Preheat oven to 350°.
Place vegan butter and olive oil in bowl and mix until fluffy. Add brown and cane sugar and mix again, then add agave nectar.
Add the rest of ingredients along with chocolate chunks and mix well.
Roll into balls then place on baking sheet.
Tip on baking: I bake at 350° until bottoms turn golden then place on low broil until tops are golden. (This allows the middle to be extra moist 🙂 )
