So I felt a little experimental the other night and tried different flavors to come up with this tasty concoction! I love any good Asian stir-fry so I decided to give it a whirl. It was SOOOO delicious!
Things you’ll need…
1/2 tsp of paprika
1/2 tsp of garlic powder
2 tsp of organic honey
1/4 tsp of cayenne pepper
1/3 cup of soy sauce
1/2 organic onion
3 organic carrots
1/2 bag of frozen organic thin green beans
2 cloves of garlic
1 tbsp. of coconut oil
1/2 tsp of ginger powder
3/4 cup of chopped cashews
1 box of mei fun pasta
Directions
Grate carrots and onion using a cheese grater then mince garlic. Saute carrots, onion, garlic, and green beans in a wok with coconut oil on med-high heat, then sprinkle with salt and pepper to taste.
While cooking, in a separate bowl, mix soy sauce and the rest of seasonings and whisk together. You can also prepare mei fun pasta at this time. I boiled a pot of water then took off of burner. I then added the entire box of mei fun and let soak for about 3 min then drained. Once veggies have been cooked to liking (mine was about 5-7 min), add mei fun and soy sauce mixture into the Wok with veggies and stir with a FORK.
You can now add cashews and mix together. Cook for about 5-7 min on med-low heat.
Serve, then enjoy!! Husband and kid approved and so easy!!
