So this recipe is actually scrumptious!
Like I mentioned before, I am not a fan of too much cold food, especially for dinner, but this makes everything a lot easier to handle! I even made a “sour cream” for them!
These veggie recipes are very flexible depending on what you have and what you like! This is what I had and used…
Ingredients…
For sour cream:
1/2 cup cashews
juice of 1/2 lemon
1 tsp of apple cider vinegar
5 tbsp of water
(mix all in blender!)
for taco “meat”…
1 1/2 cups of almonds (or walnuts)
1 tbsp of organic soy sauce
2 tsp of cumin
1 1/2 tsp of chili powder
2 tsp of EVOO
(mix everything in blender and viola!)
Toppings…
diced tomatoes ( I had organic cherry tomatoes on hand)
Organic corn (I used corn from a can that was soaked in water)
Hummus
spiralized raw organic yellow squash
“sour cream”
Build it. Eat it!
