This was the first time I have cooked with butternut squash and I do have to say this is my new FAVORITE veggie. Soooooo yummy.
My kids even loved it! Yayyyy!!! Something new and healthy I can add to their oh so picky food list!
What you’ll need…
1 butternut squash (organic preferably)
Paprika
Garlic powder
Salt
Pepper
Almond oil (or olive, or whatever oil you have lol)
That’s it.
Directions…
Place oven on a high broil and let warm up.
Cut and cube your squash by following this technique which I have linked here.
Lay out on a roasting pan and douse with oil. Sprinkle with salt, pepper, garlic powder and paprika and mix all around to coat with all the goodness.
Place in oven and allow to broil (I let mine broil for about 30 minutes, but you can just watch to get desired crispiness…just don’t let it burn : ) ).
Viola!
That’s it!
Now, serve!
