So all I can say about this meal is “thank God”!
I finally found something I can make in less than 30 minutes, dairy free (because my kids are lactose intolerant), and nutritious!
Here’s what you’ll need….
Earth’s Best freezer meatballs (no hormones and antibiotics, vegetarian fed)- found at Target
Your choice of pasta
1 carton of organic Butternut Squash soup – found at Target
a pinch of cayenne pepper
1 tsp of salt
1tsp of pepper
3/4 tbsp of paprika
2 tsp of parsley
Directions…
Because I don’t want to dirty up more than one pot, my strategy is this:
Step 1: Boil and cook macaroni then drain into strainer (leave macaroni in strainer)
Step 2: Pour frozen meatballs with a tsp of olive oil in pot used to cook macaroni and brown meatballs until ready
Step 3: Add butternut squash soup, macaroni, and seasonings
Step 4: Mix and cook till desired temp (I usually cook for 5-10min on low heat)
Step 5: SERVE!!!!
I’m telling you, it’s a HIT!
