
I Get it. Finding recipes, especially healthy ones, that your kids like is hard. When you find one, it’s gold. So here’s a big winner I just discovered that’s full of plant based protein and vitamin A!
What you’ll need:
1/2 bag of frozen organic butternut squash (I found at Target)
1 can of organic kidney beans
1/2 packet of Simply Organic taco seasoning
corn tortillas
optional toppings:
mushrooms, salsa, bell peppers
What you need to do:
Preset oven to 400 degrees. Drain beans and dump in a food processor or blender. Defrost squash then add as well. Next, taco seasoning. Add a tbsp of water or salsa then purée! I placed purée in a saucer and cooked on med-high heat for that refried bean taste. Once heated I then placed on tortillas. You must soften the tortillas for around 15 seconds in the microwave in order for them to not break apart when you roll them.
Now, assemble! Place on one side of the tortilla then roll. Once rolled, I turned them over so they wouldn’t undo. I cooked them until golden brown and crispy (maybe 20 min give or take). My kids loved them so much they each had THREE! #momwin
