Vegan Avocado Lime Rice!

This recipe is super easy! Y’all know a mom of three LOVES easy! Bonus that it’s packed with healthy goodness!

What you’ll need:

1 avocado (organic)

juice of 1 lime (I actually used Young Living’s lime essential oil, 4 drops)

juice of 1/2 lemon (or YL lemon oil, 2 drops)

tsp of salt (or go by your taste)

pepper to taste

5 sprigs of cilantro chopped

a splash of water

1 cup of organic non gmo brown rice (Whole Foods, Fresh Market, etc)

Directions:

Cook rice according to package directions. Now, blend all of ingredients in blender or food processor. Once rice is done, mix all blended ingredients in and that’s it!!! I told you easy peasy!
