
This ended up being the perfect protein punch post-workout meal! Even my kids scarfed them down! This is the type of stuff I end up creating when I have random ingredients that I want to throw in and use lol.
Ingredients…
organic (preferably farm fresh) eggs
organic kale (I had baby kale and picked out the bigger leaves)
Organic bell pepper
dill (I used dried dill, but you can use finely chopped fresh)
salt and pepper
vegan Daiya cheese (because I’m dairy intolerant)
splash of olive oil
Directions…
Preheat oven to 375 degrees
Splash and spread olive oil in each muffin tin.
Place kale and shape in each hole.
Crack one egg in each then add chopped bell pepper, dill, salt and pepper, and cheese on top.
Bake till desired egg consistency. I just watched mine till the yolk wasn’t runny (around 20min).
