Vegan Beet Pizza

Okay, so before you think (In the voice of Jimmy Fallon) “Ehhhww”, lol this is actually something that came out quite delicious. I’m quite excited that I have a new way to eat beets now! : )

Ingredients…

2 organic beets washed, peeled, and cubed

(look at these farmer’s market beauties!)

corn tortillas (I found non-GMO, organic at Whole Foods)

organic kale

Daiya cheese

a splash of balsamic vinaigrette

Directions…

pre-heat oven to 375

Put cubed beets in food processor with a tbsp of water and a splash or two of balsamic vinaigrette and purée.

Spread beet purée on tortillas then add cheese and kale. You can also sprinkle some garlic powder and olive oil for added flavor and to help kale crisp : ).

Cook until cheese melts and tortillas get nice and crispy (but not burnt ; ) )

THAT’S IT!!! So easy!!!
