
Craving a Mexican pizza and don’t want to resort to fast food, take-out, or processed crap?? Don’t eat meat or gluten? No problem! You can still eat your favorite cravings! Look no further….
What you need….
organic refried beans (I use Whole Foods brand)
organic frozen corn (Amount according to how much you want)
organic salsa (my favorite is Whole Foods brand)
organic corn tortillas (lol courtesy again of Whole Foods)
favorite hummus (my all time fave is Eat Well Embrace Life)
Directions…
Add oil (I find vegetable oil is best) to small pan and place on med-high heat. Place tortilla, one at a time, and cook (watching closely, holding it down and swirling around with a fork) until golden/crispy on one side, then flip. You have to watch the whole time as to not burn or break the tortilla. Once both tortillas are done, place to the side. Next, I heat up my corn and refried beans in a separate pan/pot. Once all is done I assemble!
I put the refried beans on the bottom tortilla and the hummus on the bottom of the top tortilla then put them together. I then added another top layer of beans, poured salsa on top, then added the corn for the finishing touch!
