Hidden Veggie Medley Pasta

So my kids lately have been so picky with eating veggies. I am constantly looking for ways to hide it in their food ; ). Here’s one way I did for a pasta side dish to go along with their Earth’s Best chicken nuggets!

What You’ll Need…

1 vegan bouillon cube (found mine at Whole Foods)

1 bag of frozen organic vegetable medley

1 8oz carton of organic vegetable stock

1 tsp pepper

salt to taste

1 tsp of garlic powder

1/2 -3/4 cup of almond milk (just add slowly until desired consistency)

2 drops of Young Living lemon vitality or juice of 1/2 lemon

1 tbsp of nutritional yeast (I found at Whole Foods)

pasta of choice (this was mine)- sometimes kids prefer angel hair or spaghetti so just keep in mind which ones your kids prefer because textures throw kids off : )

Directions…

Thaw out veggies in a pot with vegetable stock on high until fully cooked. Add to blender with rest of ingredients and blend until desired consistency. For me, my kids prefer the smoothest of texture. Then pour mixture into pot of already cooked and drained pasta, mix, then serve! Easy peasy and a great way to serve veggies to the kiddos!!
