Vegan Potato and Onion Soup

So my kids and hubby are huge soup fans so I try to come up with as many healthy and easy ideas as I can. Soup is a great way to hide a bunch of goodies in to get your kids to eat them : ). This soup has a French onion soup taste with a chunky potato texture. It’s absolutely delicious and both my kids and husband loved it and ate it all up!

So here it is…

What you’ll need…

1/2 large onion (I chose an organic yellow, chopped)

3-4 medium organic Yukon gold potatoes (cubed)

1 tbsp of nutritional yeast

1 1/2 cups of almond milk

3/4 cup of vegetable stock

1 tsp of pepper

1 tsp of garlic powder

1 vegan bouillon cube (I found at Whole Foods)

1 drop of Rosemary Vitality Oil (Young Living) or 2 sprigs or organic rosemary

Directions…

Get a crockpot, place on low, throw all the goods in, go about your day, and cook for 4-6 hrs. I had to go to work and didn’t come home till 6 hrs and all was well!! Once I got home I took a hand masher and mashed the potatoes to desired consistency.

This soup was the bomb diggity! You can add greens or whatever you want to it!
