I love this soup! Haha I think my hubs loved it more because he ate about 3 bowls : ).
So what you’ll need…

1 1/2 vegan boullion cubes (Whole Foods)
1 medium organic onion (peeled and sliced )
3 organic shallots (chopped)
1 drop of YL Rosemary EO (or 2 sprigs)
1 drop of YL Thyme EO (or 1 sprig)
2tbsp of Earth Balance butter
1 carton of 32oz vegetable stock
1 1/2 cups of water
1 tbsp of flour
salt and pepper to taste (I prob did around a tsp for both)
2 tsp of vegan Worcestershire sauce (I’ve also been out of this and used Teriyaki sauce and it still came out good!)
Directions…
One word….A working mother’s best friend: crockpot
Throw all the goods in the crockpot on low and have it cooking all day while you’re at work or doing whatever it is you’re doing! I cooked mine for 8hrs. I’m sure you can cut the time more than half if you place on high.
I topped with vegan mozzarella….and aaaah look at the goodness…
