Fall Medley Hash

I woke up this morning really craving something warm and colorful. Something to make me feel that it’s fall (even though the weather can’t make up it’s mind) : ).

So I present to you something I like to call….

Fall Medley Hash

(haha has a nice ring to it don’t ya think??)

What you’ll need…

1 small organic Yukon gold potato (cubed)

1 quarter of an organic sweet potato, cubed (I just served myself so use the amount you need of everything)

My desired amount of a mixed organic red/green bell pepper (diced)

A dash of flour of choice

Salt and pepper to taste

Pumpkin spice blend seasoning (I found mine at Whole Foods)

Earth Balance butter so potatoes won’t stick

Directions…

I put my stove on med/low heat and added Earth Balance butter to the pan. I first cooked the sweet potato for 5 minutes (or until it slightly softened), covered. Then I added the Yukon gold potatoes and covered again. I allowed them to get slightly soften then I added salt and pepper to coat the potatoes (not too much though, just a dash will do). Ten minutes into it, I added the peppers. I let them cook for about 15 minutes (or until softened) covered. I then uncovered, placed the stove slightly above medium heat and coated the potatoes and peppers with pumpkin spice seasoning and flour. I let the outer layer slightly crisp. The entire cooking probably took about 20min.

Soooo worth it though! It was the perfect side dish for my brunch!
