Seriously, cheesy spinach and artichoke goodness….and vegan???? STAAAHHHPP

You read that right, vegan…and you can’t even tell a difference.

What you’ll need…

1/2 bag of frozen chopped spinach

1 can of artichoke hearts (chop them)

1/2 bag of Daiya mozzarella

2tbsp of vegan Parmesan

1/2 container of vegan cream cheese

tortillas of choice

All found at Whole Foods

Directions…

In a pot, thaw spinach on med high heat. Once thawed, add chopped artichoke hearts then cook will warm. Drop heat down to medium then add cheese. Cook until all melted and  mix well. You can drop the heat down to keep warm while you assemble and cook your quesadillas. I bought my quesadilla maker from Bed Bath and Beyond for $19.99 and it was the best thing I’ve done all year (haha well the first week of the year).

Im telling you, best dinner ever. The best part of the best dinner??…it took me 15min and the kids actually loved it. They loved it so much that  I over heard them saying it was the “best dinner ever” (hence the description above). #momwin
