So our family loves soup and all Mexican flavored dishes…hence, “Fiesta” lentil soup!
What you’ll need…
2 cups of dry red lentils
1 can of diced tomatoes
1/2 red pepper
3 cloves of garlic
1/2 onion
1 tbsp Siracha chili sauce (taste test)
1 tsp pepper
1 tsp salt (taste test)
1 1/2 tsp of cumin
1 tsp of chili powder
a dash of paprika
1 drop of YL lime essential oil (or juice of 1/4 lime)
What to do…
Chop and/or dice your pepper, onion and garlic then add to a pot drizzled with olive oil on med/high heat. Cook till onions are soft. Add tomatoes and stock, mix, then add seasoning and lentils. Bring to a boil then lower down to med low/almost simmer. Cook until lentils are soft and thick, stirring occasionally (about 30min…I also covered the last ten minutes).
You can add toppings like tortilla chips, avocado, vegan cheese, jalapeños, etc!
