Vegan Chickpea Stew!

So I borrowed this recipe from a Pinterest idea with my own little tweaks ; )

Best part about this meal besides being delicious???

It’s a 30 minute meal under $10!! 

Who says healthy has to be time consuming and expensive??

What you’ll need…

(I used all organic ingredients)

2 cloves of garlic minced

1/2 large onion chopped

1 yellow bell pepper (I used 4 mini ones)

1 carrot (peeled and chopped)

1.5 tbsp of tomato paste

4 fresh basil leaves chopped

1 container/can of garbanzo beans drained

1tsp of red pepper flakes

Salt (I like pink Himalayan) and pepper to taste

Directions…

Drain then boil garbanzo beans. Fill water till chickpeas are covered. While the chickpeas are boiling, sauté onion, garlic, peppers, and carrot until onions are semi translucent. Add tomato paste and boiled chickpeas with the rest of the water they were cooking in. Lastly, add basil leaves and seasonings. Flip to simmer, cover and cook for 30min. I smashed about half of the chickpeas to give a thicker consistency. Also, I served mine with rice.

Yall….soooo good. My kids really enjoyed it too which is always a win.
