Grilled Vegan Avocado, Hummus, & Cheese Sandwich

Looking for another quick vegan lunch idea??

Y’all, this is so stinking good.

Its perfect for brunch, lunch, or anytime!

What you’ll need…

Your favorite bread (I used Dave’s organic Good Seed)

Earth Balance Vegan Butter

1/2 avocado

Treeline cashew cheese (black pepper flavor)…found at Whole Foods

Processed with VSCO with c1 preset

Your favorite red pepper flavor hummus (mine is a local love…Nur’s Kitchen)

Directions…

Heat stove top on medium heat. On one side of the bread spread the avocado and on the other side, spread the hummus. Thinly slice the cheese and strategically place : ). Close the sandwich and spread Earth balance on each side of the sandwich. Also, add a small slice of butter to pan as well. Cook the sandwich exactly like you would a grilled cheese (crispy and golden on each side).

 

This has got to be be my favorite go to sandwich right now.

  1. I love the look of that nut cheese … fingers crossed that they decide to build a Wholefoods out here in the Shires very soon! The sandwiches look delicious 🙂

      Yessss!!! It took us forever to get our WF but we finally did!!! I’ve tried sooo many different vegan cheeses and this by far is my favorite!! I wonder if there is a way to order it somehow??
