Vegan Lentil Tacos!

Perfect for Taco Tuesdays or any days!!

This was another health meal win that the kiddos loved!! They even ate seconds!

 

What you’ll need…

2 cups of cooked red lentils (which is 1 cup of uncooked)

1/2 yellow bell pepper chopped

1/2 onion chopped

2 cloves garlic minced

1/2 cup of salsa

1.5-2 tbsp of taco seasoning

1 pkg of blue corn taco shells

Chopped romaine lettuce (for topping)

Avocado Crema (click to see recipe)

 

Directions…

Saute on med high heat with olive oil, garlic, onions, bell pepper, until onions are translucent. Then add lentils, salsa and seasoning. Add about 1/4 cup of water as well. Lower to a simmer and stir until warmed through. Warm taco shells and assemble!!
