Vegan, Paleo, Sweet Potato and Veggie Pizza!

So I’m all about experimenting in the kitchen. I grab different ideas from other recipes and tweak them to make my own. I especially have to get creative when I’m on a detox….like now.

This week I’m avoiding gluten, complex carbs, meat, dairy, and sugar. I didn’t want to feel like I was starving myself, but I didn’t also want to live on cold salads alone.

That’s where the creativity gets sparked…it’s either that or my determination to eat something warm and yummy : ).

Behold I now present to you….

Sweet potato veggie pizza!!! 

What you’ll need…

For the crust: 

1 sweet potato

1.5 cups of almond flour

Dash of garlic powder

Dash of Himalayan pink salt (or whatever you prefer)

Dash of pepper

1/8 cup of agar powder

(can sub for arrowroot, tapioca starch or your choice of binder). I ordered agar powder off of amazon back when I made gummies for the kiddos ; ).

Toppings: 

1/2 onion sliced

Mixed Mediterranean olives

Fresh spinach

Preferred nut cheese (I prefer Treeline Cracked pepper)

Processed with VSCO with c1 preset

 

For the kale pesto:

2 cups of kale

Splash of lemon juice to taste

Olive oil

2 cloves of garlic

Salt and pepper to taste

Directions…

Peel and cube sweet potato, then steam till soft. In a mixing bowl, mix and mash potato with almond flour, and agar powder. Preheat oven to 400 degrees. Roll ingredients into big ball then place in the fridge for 30min on one side then flip ball of dough to sit for 30min on the other side. Once cooled and  slightly “toughened” in the fridge, roll “dough” ball out into your pizza shape on a pizza pan (Note* It still will be a tad sticky, just do your best to spread). Sprinkle on top with salt, pepper, garlic powder, and coat with olive oil. Cook crust for about 15min until sides are golden.

Time for the kale pesto and sautéeing the onions!

Here’s how I made the kale pesto…

I added the kale, garlic cloves, salt, pepper, splash of lemon juice, and poured olive oil until desired consistency when blended in my food processor. Viola! Yummy!

I then pulled out my crust to place the toppings on. Here’s what it looked like before toppings!

I spread the pesto, added the sautéed onions, spinach, olives, and crumbled the nut cheese on top.

I lowered the heat of the oven to 365, placed the pizza back in for about 5 min, then pulled the beauty out to dig in!!

I was so nervous to cut into it because if it was anything like my cauliflower experiment….

Well, let’s just say that wasn’t my most successful experiment.

To my surprise, it was crispy and chewy just the way I like it!!! It was like I was eating sweet potato fries as a pizza! Delicious!!!
