Vegan and Gluten Free Veggie Tostadas!

Okay so my determination to eat good tasting food on this detox has me trying all sorts of things out in the kitchen!

Detoxing is easy if you eat this good!

So here’s what dish I tried tonight…

Veggie Tostadas!

What you’ll need…

About 1-1.5 cups of chopped raw cauliflower (or however much you’re wanting to eat 😉)

Handful of raw shredded carrots

1/4 chopped onion

Taco seasoning (cumin, chili powder, paprika)

Salt and pepper

Grain free tortillas (my favorite is Siete brand)

Chopped lettuce

For the Avocado garnish…

1 avocado

1 tbsp of Dijon mustard (can sub for regular mustard)

Garlic powder

Cumin

Chili powder

Paprika

Splash of lemon juice

Dash of cayenne

Directions…

Preheat oven to 375. Heat saucepan on med high heat, coat bottom with olive oil, then add veggies. Cook until onions are semi translucent, then add salt, pepper, taco seasoning (cumin, chili powder, paprika), garlic powder to taste. While veggies are cooking, place tortillas on rack in oven until it crisps how you like (don’t forget about them because it will happen quick 😉). When everything was done, I made my Avocado topping. In my food processor, I blended the Avocado, mustard, lemon juice and rest of seasonings (dash of EVERYTHING to taste) until it looked like this…

Now to assemble!!

Tostada, veggies, lettuce, dollop of Avocado topping, then I sprinkled on some nutritional yest for extra protein and Vit B12! Delicious!!
