So at the beginning of the year especially, I feel like there are so many people on the Whole 30 diet or some type of cleanse. This is the perfect option for those of you or anyone wanting a hearty, healthy soup!
This soup is dairy and gluten free!
What you’ll need…
1 tsp of ground turmeric
1 tsp of fresh ginger, chopped/grinded very finely (can sub for ground ginger if you prefer)
2-3 sweet potatoes peeled and cubed (quantity depends on how much you want to make & the size of the potatoes)
3 whole, peeled, chopped carrots
32 oz of vegetable stock
8 oz of bone broth (optional if you want to stay vegan)
1 tsp of Himalayan salt
1 tsp of pepper
dash of red pepper flakes
3 cloves of garlic (minced)
1.5 tsp of onion powder
1 tsp of pumpkin spice seasoning blend (contains cinnamon, nutmeg, cloves)
1 vegan bouillon cube (found at Whole Foods, can be optional but adds additional flavor)

1/2 cup almond milk (judge amount by the consistency you want…don’t add till soup is cooked)
Directions…
For Instant Pot:
Using Sauté option first, add tsp of coconut oil, onion powder, minced garlic and ginger. Once sautéed a little bit to bring out oils of garlic and ginger, turn pot to “Soup/broth” high pressure option and set for 10 minutes. Make sure pressure valve is turned to the “sealing” option. Add all rest of ingredients (except for almond milk). Once pot is finished, turn to “venting” option on valve until pressure button drops and it’s safe to open. Stir in almond milk and mash potatoes until soup consistency is thick and creamy : )….and voila!!
Crockpot/slow cooker:
Obviously, you can skip the sautéing part and just add in all of your ingredients (waiting to stir in almond milk till fully cooked). You can cook on high for 3 hours and on low for 6 : ). If you work an 8 hr day and you want to get it started before work, I’m sure low on 8hr won’t hurt it ; ).
Im telling you though, if you have yet to get an Instant Pot, do yourself a favor and get one!! It’s intimidating at first, but once you figure out the settings, it’s amazing!
