Y’all these were SOOOO good…
In order for me to stick to a healthy diet I can maintain, I have to have variety. I basically come up with dishes based on foods I love and create my own healthy version of it. I can NEVER compromise on dairy so most all of my meals I post will be dairy free or a version friendly one.
My hubs lately has been obsessed with going keto and has done really well on it. To avoid cooking multiple meals, I’ve joined him lol.
This was a great recipe that I was able to convert to keto!
What you’ll need…
5 organic bell peppers (I used mostly green)
1/4 head of organic cauliflower (chopped/grinded into rice texture)
1lb of ground beef (I use grass-fed)
1 link of smoked and/or cajun flavored sausage (I get mine from a local farmer)
1 tsp of onion powder
1 tsp of garlic powder
salt and pepper to taste
dash of cajun seasoning
Daiya mozerella shredded cheese for topping (can use regular preferred cheese as well)
Directions…
Preheat oven to 375 degrees. Cut tops off of bell peppers and remove seeds.

Remove sausage from casein and brown with ground beef in a skillet. Drain once cooked through.

Take the “cauliflower rice” you’ve prepared and combine it with the meat and season with above seasonings. Mix together well then fill peppers!

Top with cheese and add tops of peppers back on.
Cover the top of the peppers with a sheet of wax/parchment paper then seal dish with foil. Cook for 30-40 minutes depending on how soft you like your peppers. 30 minutes worked well for me. YALL, so flipping delish. ENJOY!
